I try to be healthy but sometimes my sweet tooth just really takes over... who else can relate? This then leads to me consuming 3 cookies or 7 pieces of chocolate. I understand this is totally okay, but everything in moderation is the best way to treat yourself. So, today I am going to share one of my new favorite healthy & all natural snacks that really satisfies my mid-morning & afternoon sweet tooth.
#1. Gather your ingredients
- 1/2 cup creamy peanut butter
- 1/3 cup honey
- 1 tsp vanilla
- 1 cup old-fashioned or quick oats
- 1/2 cup dark chocolate chips
***I omitted the 2/3 cup shredded coconut (too sweet/extra calories) & 1/2 cup ground golden flaxseed meal (personal preference)
#2. MIX it up. I am awful at following the step by step instructions and usually just mix everything at the same time. It all gives you the same outcome, right?
#3. Then chill your dough for 30 minutes or so to help it firm up. Or, if you are extremely impatient like me just form 1" balls while its warm & gooey. The bigger the mess while cooking the better it tastes. Yields around 10 bites.
Once you have your energy bites formed refrigerate in an airtight container & place parchment/non stick paper in-between the layers.
AND lastly enjoy a tasty treats! They make the perfect pick-me up at work, road trip snack, or a little something sweet just because.
You could even add your own little twist. Some great add ins may be white chocolate chips, cranberries, almonds, or pecans. Get creative :)
