where's breakfast? healthy banana oatmeal muffins

So, if you are anything like me the first thing you do when you wake up is start the coffee and decide what you want for breakfast. I'm going to be totally honest, sometimes I even have my breakfast picked out the night before, ha. Or maybe you aren't anything like me and miss breakfast more then you eat it. Breakfast is the best way to start your day and a healthy homemade option is even better. These banana muffins are made without any sugar, oil or flour. The best part of all is each muffin comes in at a whopping 163 calories. So, yay for starting the days calorie count off on the right foot.

Let's get down to it, here is how to make these delicious healthy banana muffins--I even got the taste test approval from the hubs!

Ingredients: 

  • 2 1/2 cups of old fashioned oats
  • 2 Tbsp of oats for muffins tops
  • 2-3 large overripe bananas or (1 c banana / 1 c applesauce)
  • 2 large eggs 
  • 1/3 cup honey
  • 1/2 cups of chocolate chips 
  • 3/4 cup of milk
  • 2 tsp vanilla
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon

 

Preheat oven to 350 degrees. Next, place all of the oats in a bowl besides 2 tbsp for the tops ( you can place them in a food processor if you want the muffins to have a smoother consistency). Then it's time to mash some bananas--I used my hand mixer to make them smooth with no lumps or clumps. 

Next, add your eggs, honey, milk and vanilla. Plus, your dry ingredients and mix it all together. 

I added 1/2 cup give or take of chocolate chips for a little sweetness. Next put them in muffin tins (makes 12-14 muffins). I used a non-stick muffin tin without wrappers and it works great. You can sprinkle 2 Tbsp of reserved oats on the top for a yummy topping.

Bake @ 350 for about 20 -23 minutes or until a toothpick comes out clean + enjoy!
