Living on a generational family pork farm, it is one of our favorite proteins. I am always trying to make new dishes that include ground pork, since it does not seem to be quiet as common as ground beef recipes. Well, this dish has become a favorite around here. And I created it on accident, one day instead of making the meat and potatoes separate for supper, I decided to combine them and...voila! I love a one dish main course that can be easily served with a side salad and veggie like green beans or broccoli.
Here is how I make it (serves about 4 or so):
1. Brown 1 lb of ground sausage or ground pork. If using ground pork I season with customs salt, dash of Italian seasoning and some onion and garlic powder. Drain grease off and set aside.
2. Slice 4-5 large potatoes really thin and put in bowl. Add following:
- 2 C. heavy whipping cream
- 3 T melted butter
- 2 C. grated Colby jack or Monterey Jack cheese
- 1/4 C. Parmesan cheese
- 1/4 C. Flour
- 1/4 of a small onion, diced very fine
- season with salt, pepper, onion powder and garlic salt
3. Mix very well and add sausage to the mixture. Place in a 9 x 13 and bake at 350 for 30-40 minutes or until its browned on top and potatoes are tender. Enjoy!
