We always have a huge patch of Rhubarb here on the farm and I struggle every year to find something to make with it. This summer, these bars have been quite the treat. I made the recipe just as it was and they turned out so good. The cream cheese frosting really sets them apart from any other rhubarb recipe I've tried. I will be keeping this on my summer dessert recipe list!
