At the start of every week ( some weeks it's more midweek until I get to it) I try to refill our two snack jars in the kitchen. I have a cake stand on the counter and a glass snack jar in the pantry that I love keeping refilled with healthy (ish) treats for snacking throughout the week. It's been a great way to keep me accountable and to limit buying snacks at the grocery store; if the jars are empty, that means it's time for baking time in the kitchen!
One of our favorites for the snack jar this spring has been quick no bake oatmeal energy balls. I like to make two different varieties with mix-ins.
Ingredients:
2 C quick oats
1 C peanut butter
1/2 C honey
2 tsp vanilla
1 or 2 T of maple syrup
dash of salt
Mix together well and separate into two separate bowls for different flavors if you desire. If the mixture seems too sticky, add a dash more of quick oats.
I like to add in 2 - 4 T of espresso powder and 1/4 c white chocolate chips to half of the mix. The other half I have been adding 1/4 or more cup of dark chocolate chips and sometimes shredded coconut or finely chopped pecans.
Some other mix in options are dried fruit, mini m&ms, cocoa powder, cinnamon or other spices/flavorings like maple.
Let the mixture firm for 10 minutes are form into balls. Store in a container at room temperature for up to 5 days or so. Enjoy!
